As famous for their large family dinners as they are for their restaurants, the Scotto family’s Rosanna Scotto shares her insights on the East End’s beauty and bounty.
What is one of your favorite ingredients to cook with?
Extra-virgin olive oil, because it really makes a difference in the taste.
What was one of the first dishes you learned to prepare?
The first dish I made was penne with broccoli and sausage.
What do you love about cooking?
I love it because it brings my family together, especially when they help out in the kitchen.
Best beach for a bonfire and clam bake?
We did a great clam bake on Coopers Beach. Don’t forget to get a permit!
Who in your life inspired you and made the biggest impact on you?
My mother has been a great inspiration. She’s tough and loving. She’s pushed me to continue pursuing my dreams during various bumps in the road. And she has always cooked the perfect comfort food to make me feel better.
What do the Hamptons mean to you?
The Hamptons mean rest and relaxation with great sunsets and lots of rosé.
What’s your favorite summer cocktail?
Tequila on the rocks with lots of limes.
Where could we find you during the summer out East?
SoulCycle, MaryAnn Browning’s Brownings Fitness, Tutto il Giorno for dinner, Sant Ambroeus for lunch, and Sunday dinners at our house.
Favorite spot in the Hamptons?
Wölffer [Estate Vineyard] for sunset rosé.
What is your favorite spot in the Hamptons to watch the Fourth of July fireworks?
Coopers Beach has a great view of the fireworks.
What is the scariest thing you have ever done out East?
I went flyboarding! I was determined to get up even after a few wipeouts.
